Jade Pillars
Jade Pillar consists of the finest, downy leaves from young tea plants less than 5 years old.
It comes from a charming region called Simao, in the Yunnan Province in South China. Jade Pillar is usually classified as a White tea, though technically it is green.
The tea gets its name from the way the leaves are individually and painstakingly hand-rolled into tube or pillar shapes. Then they are dried using the pan-frying method. The skill of the tea-maker during this phase of processing lies in matching the temperature of the pan to the moisture content of the leaves.
Jade Pillar produces a delicate, light liquor with a translucent pale yellow tint. The flavour is sweet and crystal clear, with pleasant Jasmine notes evident and a strongly floral character.
To brew,place 3 or 4 “pillars” per person in a pot or Mug Infuser and add boiled water that has been allowed to cool for 2 mins. Steep for 4 minutes.
