Camomile
Camomile is greatly prized for its soothing and calming properties and has been used for centuries to treat a wide range of ailments, particularly those stemming from tension or anxiety. It is commonly used to ensure a good night’s sleep and to calm over-excited children, and is also believed to settle the digestion. It is therefore the perfect after-dinner drink. Bright liquoring and refreshing, it is a delicious alternative to tea at any time of day, especially for those trying to reduce their caffeine intake (it is of course naturally caffeine-free).
To brew: put one heaped dessertspoon per person in a warmed pot and add boiling water. Infuse for 6 mins and pour into mugs. You really don’t want to add milk to Camomile tea. A bit of honey might be nice though.
You can also make a steam inhalation by infusing with boiling water in a bowl, covering with a dishcloth and breathing in the fumes. This is believed to help with irritation or inflammation of the respiratory tract.
