Assam and Keemun
Assam and Keemun makes an excellent and rather traditional breakfast blend. Assam is the strong, rich malty tea from NE India’s Brahamputra Valley. Keemun is a black China tea with a faint hint of warm smoke, and in years gone by was a frequent constituent of a quality English Breakfast blend, adding complexity and character. This blend can also be enjoyed in the afternoon.
To brew put one heaped tsp per person in a warmed pot and add freshly boiled water. Brew for 4-6 mins. Usually served with milk and sugar, or black with a slice of lemon if you prefer. Alternatively use a mug infuser and brew for 3 mins.
